With her unparalleled expertise and passion for the craft, Pauline will elegantly introduce each pour, sharing the story behind the bubbles and the artistry of their creation. Champagne Pommery, established in 1858 in Reims, France, owes much of its legacy to Madame Louise Pommery, who assumed control after her husband's passing in 1860. A visionary in the Champagne industry, she introduced the world's first commercially successful brut Champagne in 1874, catering to the English preference for drier wines. Madame Pommery also transformed Roman-era chalk quarries into an extensive network of cellars, providing optimal conditions for aging Champagne. Today, Pommery continues to honor her innovative spirit, producing elegant and refined Champagnes that reflect a commitment to quality and tradition.
